This session explores key food safety considerations when developing value‑added products and incorporating agricultural byproducts such as apples. Dr. Hansel Mina will share applied examples from Purdue University’s Food Entrepreneurship and Manufacturing Institute (FEMI), illustrating how food safety challenges shift as raw commodities are transformed into new consumer products. Dr. Perry Kirkham will highlight opportunities to convert non‑marketable produce into value‑added products such as apple cider. Brenda Hash will discuss their company’s decision‑making process for adding a new value‑added product to its portfolio, including the role food safety played in that decision. Participants will gain a deeper understanding of how food safety risks evolve when ingredients move from raw form to shelf‑stable or refrigerated products, and how byproducts can be safely repurposed into new food or ingredient streams.
